Summer Salad: Broccoli and Ramen Noodle Salad
Last week we had the grandparents over for a little summer BBQ and I made two summer salads using Broccoli Slaw. Today I wanted to share the recipe of the broccoli and ramen noodle salad because so many were asking about it on Instagram last week.
It is a quick and easy salad one of my husbands aunts had taught me a decade ago, but I have adjusted it to fit my taste buds and add a little extra fiber.
Prep only takes 15 minutes and is ready to serve as is, or I like to chill it for an hour before serving. Either way it is a family favorite.
Broccoli and Ramen Noodle Salad / Slaw
ALL YOU NEED:
- 2 Packages of Chicken Flavored Ramen Noodles
- 1 Package coleslaw mix
- 1/2 cup of chia seeds
- 1 cup of sliced almonds
- 1/2 cup of sugar
- 1/4 cup of olive oil
- 1/3 cup of red wine vinegar
WHAT TO DO:
Follow the instruction to make ramen as usual. Do use the chicken broth mix in the water to add flavor.
While the ramen cooks add the broccoli slaw to a big bowl, mix in the chia seeds and sliced almonds.
In a small bowl mix sugar/olive oil / and red wine vinegar. Stir with a fork until the sugar dissolves.
Once the Ramen is cooked, drain like pasta. Add it to the big bowl of slaw. Using cooking sheers cut up the noodles in the slaw. Toss.
Then add in the sugar dressing and toss.
I like to chill it for at least 1 hour before serving.
