Spaghetti With Egg Cheese Spinach Sauce
This has become our family favorite dinners during the quarantine, took a couple tries to get it just right, but now we are all loving my Spaghetti With Egg Cheese Spinach Sauce. I have been sharing when I make it live on Instagram stories but so many have asked for the recipe and I think it will be a favorite for many. It can also be a “one-pot” meal but my kids don’t like mushrooms so that is the only other pan I use for this dinner, saute the mushrooms separately for daddy and mommy.
Spaghetti With Egg Cheese Spinach Sauce
ALL YOU NEED:
- 1 lb Spaghetti or Angel Hair Pasta
- 4-5 cups of chopped fresh spinach
- 1 Cup of Milk
- 2 Cups of freshly shredded cheese: Parmeggiano Reggiano or Manchego are delish
- 4 Tblsp of butter
- 2 cups of sliced mushrooms
- 1 egg
- 2 Tblsp of the Garlic Concoction
- 1 cup of chopped sweet onion (this is optional)
WHAT TO DO:
Bring a large pot of water to a boil, I like to add a dash of sea salt or pink Himalayan salt to the water.
Add pasta and cook to your preference, my family likes it a little al dense.
While the pasta cooks, I mix together the milk and egg. Whip with a fork in a bowl. Set aside.
I also saute the mushrooms at this time. I saute them with some EVOO and garlic. Set aside on low heat to keep warm.
Once the pasta is done, drain pasta and set aside. I usually toss it in the strainer with some EVOO so it doesn’t get sticky while I do the following steps.
In the pasta pot, with the pasta set aside, ADD the garlic concoction and butter. Melt. Then add all the spinach and cook till soft.
Toss in the pasta. Mix with the spinach.
Then Toss in the milk/egg mixture.
Toss in ONE cup of the shredded cheese, save a cup to sprinkle on top to serve for the Spaghetti With Egg Cheese Spinach Sauce
WHEN SERVING:
For the kids, they have the pasta and I sprinkle extra cheese on top and sometimes toss with Panko crumbs for a little pizzazz
For mommy and daddy, or kids that like mushrooms, top the pasta with mushrooms and cheese.
A true family favorite and so easy to make in under 30 minutes!
