After a long workday then hockey or ballet carpools, I love to escape into the kitchen to make my family dinner. But I don’t have hours to prep and cook something healthy. Most weeknights I just have 30minutes so I need to compromise. This is my go-to rotisserie Chicken and couscous dinner. It is another of my quick family-friendly dinners in under 30minutes.

Everything you need is pictured below. A few items are my pantry/refrigerator staples and always have on hand:
- Chia seeds to add to the salad
- Strawberries
- Cherry Tomatoes
- Can of Garbanzo Beans
- Butter
Chicken and Couscous Dinner
So, yea, technically I cheated. I did not rotisserie the chicken myself. Grabbing a roasted chicken from Jewel-Osco on my way home from client projects is the best mom recipe hack. Some times I serve it warm with rice and veggies. For the kids, I keep it warm and serve with couscous. BUT, I was craving a hearty salad and the chicken breast is perfect for this salad.
Chicken and Couscous Dinner
All You Need:
- Roasted Chicken Breast
- Baby Spinach & Butter Lettuce
- Cherry Tomatoes
- Strawberry’s
- Brianna’s Blush Wine Vinaigrette
- Croutons
- Beef Broth or Chicken
- Couscous
- Cinnamon Sticks
- Butter
- Garbanzo Beans
- Chia Seeds
What To Do:
Preheat oven to 250. Remove the chicken from the plastic packaging. Place in a cooking dish and cover with foil. Once the oven is warm, turn off and place chicken inside to keep warm.
Follow the couscous directions on the package but I am sharing my secret couscous recipe. 😉 Instead of water substitute with beef or chicken broth. I prefer beef broth for couscous and chicken broth for rice.
Bring to a boil
Add in couscous / and butter / no need to add salt because of your broth. Then here is a little secret, add in half a cinnamon stick.
Cover saucepan and simmer for 8-10 minutes.
While the couscous is simmering make the salad
Prep the salad, cut tomatoes, and strawberries in half add to salad mix and also add garbanzo beans, croutons and chia seeds. Top off with the vinaigrette when ready to serve. Set salad aside. Remove chicken from the oven, slice the meat from an angle and plate and enjoy it!
