Happy Halloween! Fall is here, or maybe winter cause it is the last day of October, yup Halloween, and it is 30 degrees and snowing. So the fam is in the mood for a chili night after trick or treating in the chili weather. 😉 Since we will be busy with trick or treating I wanted a quick and Easy Chili Recipe. Nothing too crazy and something that I could get done in 30minutes for under $30 dollars. Yup, I was able to pull together an easy chili dinner in under 30minutes and feed my entire family of five for under thirty dollars.
Lucy is so excited for today, my older boys, more so for the opportunity to get out of school early and hang out with friends. But, tradition has it that my parents come over, we relax after walking all over the hood and then head home for a warm meal. I love this easy chili recipe and thought of all of you if you needed a little dinner help. I am able to find everything I need at my local Jewel grocery store and I think they knew what we were all thinking cause 90% of my ingredients were on sale!
Easy Chili Recipe
All You Need:
- 1 Package of Original Six Gun Chili Mixin’s
- 2 Pounds of Ground Meat (feeds 5+)
- 1 Can of Diced Tomatoes
- 1 Sweet Onion Chopped
- 1 Garlic Clove Chopped
- Vegetable Topping of Choice (we used corn for little Lucy)
- Package of Mild Cheddar Cheese (to spring on toppings)
- 1 Package of Pillsbury Grands Homestyle Biscuit
In a bowl mix the 2 large packages of Six-Gun Chili with 1 cup of water. Set aside. In a large pot (I like to use my Le Creuset Dutch Oven) saute onions and garlic in 2tblspoons of oil. Once soft add in ground meat. Cook until brown. Drain the meat. Then, back in the pot add the water mixture to the meat mixture. Throw in the can of diced tomatoes. Juice and all. Simmer for 20minutes. You can leave as is. Or follow Six Gun Chili Mixin directions to add in a kick with their included spice package. Also, you can make it a little thicker using their masa package and warm water. I add about half the masa/warm water mixture to make the chili a little thicker.
While the chili simmers. Place the biscuit in a preheated oven at 375 for 15-20minutes, follow package directions.
When all done, I set up a little make your own chili buffet. Kids place the biscuit to a plate or bowl, top the biscuit with chili, and then they top that off with cheese, veggies (corn/peas/green beans anything) and ENJOY.
