I did it! I had my first Keki Cooks Instagram live. You all see me in Instagram stories cooking dinner all the time, I thought why not have you join me behind the scenes. So many times I get asked, “How do you do it?” Well, if you saw the live, you saw the chaos. Looking back, I am thankful you all got to see that life is crazy and overwhelming. Cooking dinner is not as perfect as Instagram can make it seem. But I am excited for this new series of Keki Cooks and to take you all with me, first up, my own take on an Empanada Recipe.
After each Keki Cooks, I will share the recipe and some photos (if I remember to take them) of the dish for those of you who couldn’t join in the chaos. BUT, I will also share what I will be making and the recipe a couple of days before I go live in case you want to cook with me that night. This week I did an easy empanada recipe because this mom does not have time for complicated.
I want this to become a community for all of you. In other words, come home with keki, into my kitchen, while I make dinner, and ask questions, anything, from Staging to Homes, to personal or even ask my kids if they stick around to help. I want you all to know I am here and my door is open.
Easy Empanada Recipe
Ingredients
- 1 Yellow Onion
- 1 1/2 pounds of ground beef
- 1 tablespoon of tomato paste
- 1-2 tablespoons of adobo seasoning
- 2 packages of empanada dough (Goya)
- 2 packages of shredded Monterey Jack Cheese
- 2 cloves of garlic
- 1/4 cup of red wine vinegar
- Olive Oil
- 1 Egg
- Kosher Salk
- Black Pepper
- Canola Cooking Oil if you will fry the cheese empanadas
Steps
- Preheat Oven to 375 degrees.
- Dice Onion
- Minced Garlic
- Heat olive oil in a skillet
- Add garlic and onion. Once soft, do not burn the garlic.
- Add ground meat
- While browning the meat, add adobo seasoning, tomato paste, and red wine vinegar
- Set aside and start to heat Canola Oil in the pan.
- Softly press the Goya empanada dough so it is a little bigger. Use a spoon add meat mixture to half the empanada circle, fold over, and with a fork edge the sides so they stick together.
- You can add cheese inside the meat empanada or simply add cheese to the dough to make cheese empanadas.
- Crack the egg and with a cooking brush, coat the top of the empanadas to give them a nice golden color when they cook
- Place meat empanadas in the oven for 15-20 minutes or until dough is slightly golden.
- Using a frying spoon, dip cheese empanadas into hot cooking oil. They just need 2 minutes, be careful not to overcook.
You can top off with a chimichurri sauce or eat as is. ENJOY!
